Our cattle are certified organic, we received our organic ceritification on the beef by Quality Certification Services..
More importantly, our cows are raised exclusively on a grass and clover diet.
According to The New York Times, July 6, 2005 -
“The chemical composition of the fat from cows that eat no grain is different. The
fat feels lighter in the mouth and cooks faster because the melting point is lower.
The trick is to cook that steak more gently. Don’t sear the meat as hard as you
might a grain-fed steak.”
The University of California at Berkley’s publication “Wellness Letter” has this to say
about grass-fed beef:
“A four ounce serving of grass fed beef typically has 7-10 grams of total fat, compared
with 14-16 grams in the same cut of corn-fed beef. Grass-fed beef, besides being lower
in saturated fat, also contains more of the beneficial unsaturated fatty acids called
Omega-3’s (similar to those in fish), as well as vitamin F. Grass-fed beef also supplies
more conjugated linoleic acid (CLA), another type of fat that has potential health benefits.”
